Tasty Paneer Recipes

Paneer Kofta

As one takes the name of Paneer or cheese, one at once remembers the different recipes of cheese. It is prepared by adding citric acid or lemon juice. This will curdle the milk separating the curd and whey. One point to notice here is that if you want good soft Paneer then use left over water of Paneer to curdle it .This curd is transferred in cotton cloth and hanged in some place or kept under some heavy item for 2 hours. Now the Paneer is ready to prepare different dishes. Here I am giving two recipes of paneer. Hope you will like it—

Ingredients-Paneer 250 gram,Maida-1-2 spoon(it is more finer form of wheat) ,Salt-as per taste, Coriander Powder-half spoon, Green chili-1 chili finely chopped, Coriander leaves,3-4 chopped tomato,1/2 cup tomato ketchup, Ginger -1 inch piece,Oil-1-2 spoon,2-4 granule- asafetida, Cumin-1/2 table spoon, asafoetida-1/2 table spoon,Turmeric-1/4 small spoon, Mustard seed-1/2 table spoon, Cumin-1/2 table spoon, Red chili powder-1/6 small spoon, Garam masala-1/4 small spoon.
Preparation- Finely chop the Paneer, add Maida, salt, coriander, chilli powder, coriander powder, garam masala in it and mix it well. It is our mixture for Kofta, heat oil in pan. Make small round ball .Now fries it in heated oil till it attains golden colour.

For making gravy,

Heat oil in a pan, add mustard seed , cumin, ginger and grated green chili in it, mix it well, now add chopped tomato and tomato ketchup in it. Add red chilli, cumin powder, asafetida,salt and turmeric. Stir it well for 10 minute until whole water is absorbed by tomato. Our gravy for Kofta is ready. Now add the Kofta ball and Garam masala and chopped coriander leaves in the gravy.
Serve hot Paneer Kofta.

Note-If Both the recipes is prepared in Ghee in palace of Oil , it will be lot tastier.

Paneer Makhni

Ingredients-Paneer 200 gram,Oil-4 table spoon,,4 green cardamom ,cloves-5 ,ginger-1/2 inch piece, Green chili-3 finely chopped ,tomato-3-4, 1/2 cup tomato ketchup ,red chili powder-1 table spoon, 2-4 granule- asafetida,Salt as per taste,Garam masala-1 table spoon,Butter or Milk cream-1/4 cup.

For gravy-chop the tomato, heat oil in pan, add mustard seeds, cardamom, cumin, asafetida,crushed ginger. Add chopped tomato and ketchup in it. After that, add red chilli powder. Stir it well, after 10 minutes add cream(or butter) in it.

Take big Paneer in bread slice shape, either boil it small water or fry it in a very small quantity of oil. Take it out and cut Paneer pieces in small square shape. Add it in gravy we prepared earlier. Heat it for 10-15 minutes. Our Paneer Makhni is ready.
Add chopped coriander leaves and serve it.
